Yes you can and the flour can be used to make mock twinkies.
I made mock twinkies for one of our customers. She is about 10. She is going to camp and has to take all her own good.. She came to Pearl Farmers Market Saturday to try the Gluten Free Twinkies.
What a joy, she was smiling, jumping up and down and so excited to have treats like everyone at camp. Her mom purchased several for next's weeks lunch and she is going to send a grocery list for camp. Makes me smile to see cooking is a joy, and gluten free cooking even more!
